Easy BBQ Chicken Flatbread pizza

1 can Pillsbury refrigerated artisan pizza crust or thin pizza crust or can use actual flatbread

2-3 thin boneless skinless chicken breasts

 

Rub for chicken:

1 tsp paprika or sweet paprika

1/2 tsp chili or cayenne powder

1 tsp ground yellow mustard

1/2 tsp black pepper

1 tsp garlic powder

1/2 tsp salt

½ tsp onion powder

1 tsp Italian seasoning

½ tsp poultry seasoning

½ tsp Cajun seasoning

1 tsp smoked paprika

 

¾ to 1 1/4 cup favorite barbecue sauce (honey BBQ, Sweet and Spicy, hickory, etc)

2 to 3 cups mozzarella cheese, shredded (buy block and shred yourself)

¾ to 1 cup mild cheddar cheese, shredded (buy block and shred yourself)

2/3 cup red onion, thinly sliced (soak in cold water for 10-15 minutes in fridge then pat dry)

1 cup roasted red peppers from a jar, drained and chopped

1 cup fresh tomatoes, seeds removed and diced

3-4 tablespoons chopped fresh cilantro, if desired for garnish

optional: drained and rinsed corn, drained and rinsed black bean

 

Heat oven to 375 degrees

Place seasonings in a ziploc bag. Add chicken breasts and shake to coat. Place on a parchment lined baking sheet sprayed with cooking spray. Bake for 15-30 minutes, until chicken is cooked thoroughly. Flip chicken half way through cooking. Remove from oven and dice/chop the chicken. Set aside

Turn the oven up to 400°F. Take a 15×10-inch pan with sides and flip it upside down. Use the bottom as the tray and spray with cooking spray.

Unroll dough on pan; starting at center, press dough into 15×10-inch rectangle. Can crimp the edges a little if desired. Bake about 6-9 minutes or until light brown. Remove from oven.

Spoon BBQ sauce over the bottom of the crust. Then sprinkle 1 1/3 cup of the mozzarella cheese. Add the chicken, peppers, tomatoes, onion. Then add remaining mozzarella cheese and cheddar cheese. Bake about 5-12 minutes longer or until cheese is melted and crust is cooked and browned. Sprinkle with cilantro. To serve, cut into squares.
