Greek Salad

Greek Salad


1 to 2 cucumber, seeded and chopped

1 red onion, thinly sliced and soaked in ice cold water for at least 30 minutes in fridge

1 container traditional regular crumbled feta cheese or find the block and crumble yourself

2 cups roma or other tomatoes, diced or use a package of grape or cherry tomatoes (chopped or whole)

1 red bell pepper, roasted, seeded and chopped or buy a jar of roasted red peppers and drain + chop

1/2 to 1 cup pitted Kalamata red olives or black olives, drained and sliced

1 cubanelle pepper or 4 pepperoncinis, diced



1 to 2 cup romaine or iceberg lettuce, shredded

1/4 to 1/2 cup fresh chopped parsley

1/2 to 1 lb grilled chopped chicken or shrimp, cooked



4 tbsp extra virgin olive oil

6 tbsp red wine vinegar

1 1/2 tsp Mediterranean/Greek/Italian seasoning

1 tsp Greek or regular oregano

1/8 tsp salt

1/2 tsp black pepper

2 tsp grated parmesan cheese

1/4 tsp garlic powder

1/4 tsp sugar

1/4 to 1/2 cup Kraft or other Italian dressing ( optional )


Make dressing. Place in fridge for 30 minutes.

Combine salad ingredients, except for cheese
