White chocolate coconut Frosting
4 ounces white baking chocolate, melted and cooled
1/2 cup butter, softened
1/2 teaspoon coconut extract
½ tsp vanilla extract
2 to 3 1/2 cups confectioners/powdered sugar, spooned or poured into cup
In a large bowl, beat butter and extracts until fluffy. Add 1 cup powdered sugar. Add in cooled chocolate. Gradually beat in confectioners’ sugar, 1 cup at a time. Adjust for sweetness or stiffness. More sugar means more sweetness and stiffer frosting. Less sugar means less sweetness and not as stiff frosting. Use cream or milk to thin frosting if too thick.
