Coconut White Chocolate Pudding Frosting

(J P 1st, M 2nd)

 

1 stick unsalted butter, softened

2-4 cups powdered sugar, spooned /poured into cup

2 tbsp coconut milk

1 teaspoon coconut flavoring

1 tsp vanilla extract

1 small box white chocolate instant pudding

1 cup milk

 

With an electric mixer, beat butter on medium speed until creamy. Beat in 1 cup sugar. Add in extracts and milk. Mix together pudding and milk and whisk until thick and blended. Add in 3-4 tbsp of the mixture to the buttercream. Blend together. Add more powdered sugar, 1 cup at a time until you use about 2 ½ to 3 cups. Beat until creamy, 3-5 minutes. Thin out with coconut milk if too thick or if a stiffer frosting is desired, then add more sugar.
