Chewy Brownies



1/2 cup unsalted butter, cut into pieces

¼ C + 1 tbsp cocoa powder

2 oz semi-sweet chocolate, finely chopped

2 tbsp vegetable oil

1 1/3 cups granulated sugar

2 large eggs

1 teaspoon vanilla extract

3/4 cups all-purpose flour, spooned and leveled in cup

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup coarsely chopped pecans and/or walnuts

Confectioners’ sugar, for dusting on top if desired


Preheat oven to 350 degrees.

Melt butter in a large saucepan. Add in chopped chocolate. Whisk in cocoa and oil until smooth. Cook and stir over low heat until cocoa is blended. Stir in sugar. Add eggs, one at a time, stirring well after each addition. Stir in vanilla. Combine flour, baking powder and salt; gradually add to cocoa mixture. Stir in nuts.

Spread into a greased 9 x 9-in or 8×8 baking pan. Bake for 20-50 minutes or until a toothpick inserted near the center comes out with just a few moist crumbs (no liquid batter). Cool in pan on a wire rack. Dust with confectioners’ sugar, if using
