Smashed Red Potatoes

5 medium red potatoes, scrubbed cleaned and quartered (2 peeled and 3 not peeled)

1 ½ tsp garlic powder

4 tablespoons unsalted butter, very soft

3-4 tbsp milk and/or heavy cream, warmed

2 tbsp sour cream

1/2 teaspoon salt for boiling potatoes

¼ tsp salt for mashing potatoes  (if necessary)

1 tsp Italian seasoning

½ tsp dried oregano

1/2 tsp dried parsley

1/2 tsp black pepper

1/3 cup white cheddar or monterary jack cheese, shredded

2 1/2 tbsp fresh chives, chopped

optional: cooked chopped bacon or bacon bits

 

Place potatoes, salt and garlic in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are very tender.

Drain well. Add the butter, milk/cream, sour cream, seasonings; mash. Fold in cheese and chives (and bacon if using)
