Baked Sweet and Spicy Pork Chops

Brine:

1 to 2 cups water

1/4 tsp salt

1 tbsp white sugar

1 tsp Italian seasoning

 

4 -6 thin to medium cut boneless center cut pork chops

2 tablespoons butter or oil

 

¼ cup brown sugar

4 tablespoons Worcestershire sauce

4 tbsp balsamic vinegar

1 tbsp honey

1 tbsp dijon or honey mustard

1 large sweet onion (like vidalia), sliced

 

1/2 tsp salt

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp black pepper

1 tsp chili or ancho powder

1 tsp smoked paprika

1/2 tsp sweet paprika

1 tsp ground mustard

1/2 tsp brown sugar or white sugar

1 tsp dried oregano

1/2 tsp cocoa powder

Instructions

Mix together brine ingredients, place into a zip loc bag with the pork chops and place in fridge for at least 1 hour. When ready to cook, remove chops, drain and pat dry.

Preheat your oven to 375 degrees.

Melt the butter/oil in a skillet on medium-high heat. Season the pork chops on each side with salt and pepper. Cook for a few minutes on each side, until nicely browned. Transfer the chops to a 2 quart casserole dish, leaving the burner on. Rub the pork chops on both sides with remaining seasonings.

Add the sliced onion, 1/4 cup brown sugar, honey, mustard, vinegar, Worcestershire sauce to the butter in the skillet. Cook for 5-7 minutes. The mixture will be dark & lovely. Pour the onion mixture evenly on top of the pork chops. Cover with tin foil & bake for 15-30 minutes or until thoroughly cooked (between 145-160 degrees). If desired, can remove place sauce and onion mixture in a bowl and place chops on a gas grill or under the broiler for a few second to brown then top with the onion mixture.
