Chewy Chocolate Chip Cookies
(P, J 1st)
1 stick unsalted butter, room temperature
3/4 cups light brown sugar, packed
3/4 cups white sugar
1 large egg, room temperature
1 tsp. vanilla extract
1 ¼ C + 2 tbsp all-purpose flour, spooned and leveled into cup
1/2 tsp. baking soda
1/4 tsp. salt
1 1/2 cups semi sweet, dark and/or milk chocolate chips/chunks
Preheat oven to 350 degrees F.
Place soft butter in large mixing bowl and beat on high until creamy.
Add white and brown sugar and beat on high until light and fluffy. Reduce mixer speed to medium and add egg + vanilla.
In a large bowl, sift together flour, baking soda and salt. With mixer on low, add dry ingredients in 3 batches. Add the chocolate chips and stir just until they are incorporated into the dough.
Form your dough into balls using a cookie scoop or measuring spoon by the tablespoonful. Bake for 8-13 minutes until edges are starting to golden brown. Let them cool for 2 minutes on the cookie sheet. Transfer to a cooling rack or container
