BBQ Chicken Ranch Sandwiches



4-6 boneless, skinless chicken breasts

1 bottle of hickory or original BBQ sauce

1 tbsp honey

1/2 cup brown sugar

1/2 to 1 tsp hot sauce (or 1/4 to 1/2 tsp haberno sauce or spicy bbq sauce)

1/2 tsp garlic powder

1/2 tsp onion powder

¼ tsp ground thyme

1/2 tsp ground mustard powder

1 tsp paprika

1 tbsp vinegar

1 tsp steak sauce

1 tsp worcestshire sauce

1/2 tsp black pepper

1 tsp yellow mustard

1/2 tsp ground chipotle pepper

¼ tsp cayenne or chili powder

1/2 tsp white pepper

1/2 tsp Italian seasoning


1/2 of a yellow/white onion, sliced

4-6 sandwich buns (ciabatta, potato buns, hamburger buns, artisan rolls, etc)


4-6 slices Swiss or provolone or cheddar cheese

Some pickles

Sliced tomatoes

Shredded lettuce

Slices of cooked bacon


Spread for bun:

Ranch dressing


Boil the chicken in enough water to cover the chicken for 15-25 minutes. When cooked through, let cool for 15 minutes. Shred the chicken with forks or your fingers.

Caramelize the onions in a skillet with a little oil and brown sugar

Preheat oven to 375 degrees

Add the sauce ingredients together and cook the sauce in a pot for 5-10 minutes. Mix a little with the chicken and caramelized onions.

Cover a baking sheet with foil. Split buns and on the bottom buns add BBQ chicken/onion mixture, bacon (if using) and a slice or two of cheese. Place both tops and bottoms in oven and bake until the cheese melts and everything is hot. Remove from oven. Finished adding toppings (lettuce, tomato, pickles), if using. Spread ranch dressing on top bun. Form sandwiches and enjoy.

Serve with chips, fries, roasted potato wedges, potato salad or anything else you desire.
