Gelatin whipped Cream Filling/Frosting

Gelatin whipped Cream Filling/Frosting/Decorating (follow parenthesis for small batch)

1 cup heavy whipping cream (1/2 C)

1-2 tbsp gelatin mix (I picked strawberry but can choose any flavor you desire) (1/2 -1 tbsp)

8 tbsp powdered sugar (4 tbsp)

1/2 tsp vanilla extract (1/4 tsp)

1/2 tsp unflavored gelatin (1/4 tsp)

Put metal bowl and beaters into freezer for 10 minutes.

Pour cream into bowl and begin whipping. Before the cream gets to soft peaks (it is doubling in size and starting to thicken but still liquidy), add in the gelatin. Continue to beat to soft peaks and then add in the sugar and extract. Beat some more and then add gelatin. Beat until stiff peaks/firm.
