Coffee Cake Recipe

½ cup unsalted butter, room temperature

1 1/8 cup sugar

1 egg, room temperature

2 tsp. vanilla

2 cups cake flour

2 tsp. baking powder

1/2 tsp. kosher salt

1/2-3/4 cup milk

Topping, see below

  1. Preheat the oven to 375ºF. Cream butter and  sugar until light and fluffy.
  2. Add the egg and vanilla and beat until combined. Sift flour, baking powder and salt.
  3. Add the flour mixture to the batter a little at a time, alternating with the milk.
  4. Grease a muffin tin with butter or coat with non-stick spray. Distribute batter among muffin holes. Sprinkle muffins with topping. Bake for 12-30 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. Let muffins cool in pan before serving.

Crumb Topping

1/4 C brown sugar

2 tbsp white sugar

2 tsp cinnamon

4 tbsp cold butter, cut into cubes

1/2 C all purpose flour

Mix together until the mixtures resembles coarse crumbs/sand

Cinnamon Sugar Topping

1/4 cup white sugar

1 1/2 tsp cinnamon

mix together
