Apple Wood Oven Roasted Turkey Breast

Apple Wood Oven Roasted Turkey Breast

– 1 to 2 boneless turkey breast (can use one with bone but will take longer to cook), 3lb each

– 2 to 4 tablespoons oil or melted butter or combo of both

– 1 Jar of Applewood seasoning (may need two jars if turkey(s) are quite large)

– Mixture of 1/2 C water + 1 C chicken stock (plus more later on in the  cooking) (for basting the turkey)

Instructions

  1. Several Days Before : Thaw turkey breast completely in the fridge
  2. Day of: Rinse of turkey and pat dry.
  3. Coat turkey with olive oil and rub in the spice mixture
  4. Place in baking pan on top of 4 aluminum foil balls or on a grated roasting pan
  5. Place the mixture of water/chicken stock in bottom of the pan (use this to baste turkey every 30-45 minutes and refill with liquid as needed until turkey is done cooking)
  6. Cook at 420 degrees for 20 minutes then cover with foil and cook at 350 for 40-90 minutes then back up to 420 for the last 15-30 minutes (or bake at 350 if have a bone in or larger turkey breast until almost done and then cook at 420 for last 10-15 minutes), uncovered until internal temperature is 160-170 degrees
  7. Remove from oven and cover with foil, allow to rest 20-30 minutes before slicing Baste with pan sauce before serving.

NOTE:

2 to 3 lb turkey will be 1 1/2 to 2 hours

4 to 7 lb turkey will be 2 to 2 1/2 total hours

7 to 9 lb turkey will be 2 1/2 to 3 hours
