2 to 2 1/2 cups of sliced/chopped strawberries
1/4 to 3/4 cup granulated sugar (depending on how sweet you want it or how tart the berries are) (I used 1/4 C to 1/2 C for 2 to 2 1/4 C of chopped strawberries for balance of sweet and tangy)
1 1/2 tsp lemon juice
1/2 Tbsp cornstarch dissolved in 1/2 tbsp cold water
Mix strawberries with sugar and lemon juice in a bowl. Let set in fridge for at least 1 hour (preferably 2-6 hours). Put into a pot and simmer with the dissolved constarch for 10-20 minutes until the strawberry mixture has thickened.
Turn off heat. Transfer to a medium bowl and cover with plastic wrap. Refrigerate until cool.
