Real Simple’s Sugar Cookies

2 1/2 cups all-purpose flour, spooned and leveled (1 1/4 C)

1 1/2 teaspoons baking powder (1/2 + ¼ tsp)

1/2 teaspoon kosher salt (1/4 tsp)

1 cup (2 sticks) unsalted butter, at room temperature (1 stick)

2 cups + 2 tbsp sugar (1 C + 1 tbsp)

2 large eggs (1 egg)

1 teaspoon pure vanilla extract (1/2 tsp)

 

Heat oven to 350° F. In a medium bowl, whisk together the flour, baking powder, and salt.

Using an electric mixer, beat the butter and sugar on medium-high speed until fluffy, 2 to 3 minutes. One at a time, beat in the eggs, then add the vanilla. Reduce speed to low and gradually add the flour mixture, mixing until just combined

Drop tablespoonfuls of the dough onto baking sheets, spacing them 2 inches apart.

Bake until the edges are set and cookies are golden, 8 to 12 minutes. (Or if a more butterscotch taste is desired, bake only for 7-9 minutes until barely set around the edges) Cool slightly on the baking sheets, then transfer to wire racks to cool completely.
