Sweet Potato Casserole/Praline Yams

29 oz can of Princella Cut Yam, drained liquid into a bowl + 1 smaller can of yams, drained (or 1 40 oz can)

1/3 C + 1/3 C chopped pecans

1/3 C + 1/3 C shredded coconut

1/3 C + 1/3 C packed brown sugar

3 tbsp + 3 tbsp all purpose flour

3 tbsp + 3 tbsp melted unsalted butter

1 tsp + 1 tsp ground cinnamon

 

Heat oven to 350 degrees. Take drained yams, break them up and layer in a small, slightly greased casserole dish. In a small bowl combine the other ingredients and blend well.

Add a small dash at a time of the reserved liquid until right consistency (not mushy but not dry, lightly damped).Lightly mix the juice and yams together and reform a layer. Add a little of juice and smooth on top.

Sprinkle topping over yams and bake for 35-45 minutes or until bubbly and browned. You can broil for 1-2 minutes to further brown the topping.
